Bakewell Tart Cake

This recipe came from one my local SW group members. I have tried it tonight and it hit the spot for me. I can also see possible easy variations to mix it up a bit. Without the jam it is a good base mix to which other flavours can be added.

You can have a big portion of this and not feel guilty at all.

Ingredients:

  • 80 grams porridge oats
  • 1 large tub of 0% fat vanilla yoghurt
  • 3 eggs
  • 2 tbsp sweetener
  • 2 tsp almond essence
  • 4 tsp cherry jam
  • Method:
    1. Mix all the ingredients together in a bowl. Try and break up the jam but not mix it in smoothly.
      Pour the mix into a paper loaf case in a loaf tin.
      Bake in a oven at 180 degrees c for 45 minutes.
      Cool and slice.
  • I served mine with creme fraiche with Caramel Pecan sugar free syrup mixed in (only a splash).
  • On my SW regime I could have four slices this size and have plenty spare for some other treats as well.
  • I am going to try it with different jams or maybe adding cocoa to make a chocolate cake or possibly mashed bananas to make a form of banana bread (without the jam of course).
