I tried these out of interest and they proved to be a fantastic and tasty alternative to regular wraps. This recipe produces eight wraps.
Beat the eggs until smoothly mixed.
Add the parsley and seasoning (these elements can be swapped for alternatives like coriander, chilli or garlic).
Spoon onto a hot, non-stick frying pan (or pancake cooker which I used).
Spread out the mix with the back of the to make a thin layer and then, after a minute, turn and cook the other side for thirty seconds.
Place on a sheet of baking parchment and then layer up (paper,wrap) until all are cooked.
Serve with your favourite dishes to make burritos etc.
- 10 eggs
- Handful of chopped parsley
- Salt and pepper to your taste
