The summer has hit, Ezra is back from Uni and his girlfriend is staying with us as well. Sunday dinner plans need making and we are aiming for us all to sit around the table once Ezra and Marisa are back from the beach.
The meal must try and meet the following range of needs, desire and requirements.
I am doing SW, as we know.
Ezra follows a mixture of ‘My body is a temple’ and ‘My temple needs a treat’.
Marisa is vegetarian.
Reuben likes most food as long as it is plain and simple.
Maggie likes most food as long as it is tangy and tasty.
The resulting meal proved successful and not too complicated to make and could be easily replicated. It is part invention, part request and almost entirely SW friendly.

Homemade Chicken Nuggets
Chicken and Asparagus Parcels
Pan Fried Halloumi Steak
with
Air Fried Chips
Three Bean Salad
Mixed Leaf Salad
I won’t detail every element as some have been shared before or are very straight forward but please ask if you want any details that I have missed out.
Homemade Chicken Nuggets
Ingredients:
- 2 large chicken breasts
- 120 grams fine brown bread crumbs
- 2 eggs (beaten)
- 2 tbsp dried mixed herbs
- 2 tsp mustard powder
- 1 tbsp smoked paprika

- 2 large chicken breasts
- 1 bundle of asparagus
- Garlic Granules or 2 chopped cloves of garlic
- Ground black pepper
- Low calorie butter spray
Methods:
- Lay five or six asparagus stems on a sheet of tin foil.
- Place a chicken breast on top.
- Spray with low calorie butter spray.
- Sprinkle with garlic and black pepper.
- Fold and seal the tin foil to form parcels.
- Cook in a medium/hot oven for thirty minutes.


- 1 can Kidney Beans
- 1 can Cannellini Beans
- 1 can Borlotti Beans
- 2 deseeded and chopped birds eye chillis
- Juice of 2 limes
- Chopped handful of coriander
Method:
- Mix together all the ingredients.
