Making a meal that suits everyone is tough.

The summer has hit, Ezra is back from Uni and his girlfriend is staying with us as well. Sunday dinner plans need making and we are aiming for us all to sit around the table once Ezra and Marisa are back from the beach.

The meal must try and meet the following range of needs, desire and requirements.

I am doing SW, as we know.

Ezra follows a mixture of ‘My body is a temple’ and ‘My temple needs a treat’.

Marisa is vegetarian.

Reuben likes most food as long as it is plain and simple.

Maggie likes most food as long as it is tangy and tasty.

The resulting meal proved successful and not too complicated to make and could be easily replicated. It is part invention, part request and almost entirely SW friendly.

The Menu:

Homemade Chicken Nuggets

Chicken and Asparagus Parcels

Pan Fried Halloumi Steak


Air Fried Chips

Three Bean Salad

Mixed Leaf Salad

I won’t detail every element as some have been shared before or are very straight forward but please ask if you want any details that I have missed out.

Homemade Chicken Nuggets


  • 2 large chicken breasts
  • 120 grams fine brown bread crumbs
  • 2 eggs (beaten)
  • 2 tbsp dried mixed herbs
  • 2 tsp mustard powder
  • 1 tbsp smoked paprika
  • Method:
  • Cut the the breasts length ways into three strips and then cut each strip into three or four pieces. Try and keep them a good size.
  • Mix the breadcrumbs, herbs, paprika together.
  • Dip the chicken pieces in egg and then the breadcrumbs.
  • Lay the nuggets on a baking tray sprayed with low calorie oil and then spray over the top.
  • Cook in a medium hot oven for thirty minutes.
  • Chicken and Asparagus Parcels
  • Ingredients:
    • 2 large chicken breasts
      1 bundle of asparagus
      Garlic Granules or 2 chopped cloves of garlic
      Ground black pepper
      Low calorie butter spray


    1. Lay five or six asparagus stems on a sheet of tin foil.
    2. Place a chicken breast on top.
    3. Spray with low calorie butter spray.
    4. Sprinkle with garlic and black pepper.
    5. Fold and seal the tin foil to form parcels.
    6. Cook in a medium/hot oven for thirty minutes.
  • Three Bean Salad
  • Ingredients:
    • 1 can Kidney Beans
      1 can Cannellini Beans
      1 can Borlotti Beans
      2 deseeded and chopped birds eye chillis
      Juice of 2 limes
      Chopped handful of coriander


    1. Mix together all the ingredients.
